Here in Maine, we see more daylight everyday, but we know that we have cold days ahead of us. The following recipes incorporate
the saltiness, seeds, and roots of Winter
with the new shoots and sweet saps of Spring.
LEMON-GINGER TEA
  1. Boil a slice or two of fresh ginger in water
  2. Squeeze in juice from a lemon wedge
  3. Add maple syrup to taste
BAKED BEANS
(Homemade or Canned – buy local!)
  1. Heat up your beans.
  2. Add a fat of your choice (hot dogs count)
  3. Sweeten (if needed) with maple syrup
HEARTY STEEL CUT OATS BREAKFAST
  1. Soak oats in water with a spoonful of yogurt overnight (optional)
  2. Bring to boil and add salt if desired.
  3. Let stand while showering and dressing (or drinking that first cup of coffee/tea)
  4. Put in a bowl and add butter/olive oil/bacon fat
  5. Sweeten to taste with maple syrup
  6. Add fruit (optional)
WINTER MOCKTAIL
  1. Put in a tablespoon or so of pine or maple syrup
  2. Add some bitters/tinctures (strong herbs that taste good with your syrup)
Fill glass with seltzer/club soda/hot water
